Brio Gusto Recipe


Here is the recipe for the delicious treat made by Brio Gusto last month at the market: 


Garden Vegetable Sliders
3.5c chickpea flour
4 cups split peas
1 can chick peas - rinsed
8oz mushrooms (we used button, crimini & portobella)
1tsp cumin
1 tbsp soy sauce
1 white onion - sauteed
lots of garlic
1/2 cup of nutritional yeast
scallions to your taste

Sautee onions allow to cool
blend 1/2 of the split peas, all of the mushrooms, chickpeas, soy, cumin, garlic & yeast in a food processor. add cooled onions and blend to smooth
Add the other 1/2 of the peas for mouth feel and work the chickpea flour in with you hands until it form a thick pancake like batter
season to taste with salt and pepper
to cook : heat a cast iron pan to medium, with a bit of oil fry about 1 oz of batter for slidders and 3-4 oz for regular size until heated through
